Refreshing and Invigorating Summer Cocktail Recipes

What’s summer without a good cocktail? Sometimes the thought of creating your own cocktails can be a little overwhelming; what mixers do I use, will these ingredients taste okay, can I make cocktails without spending a fortune?

If you’ve ever thought the same, this cocktail recipe post is for you. I’ve put together this list of super refreshing and invigorating summer cocktail recipes that are guaranteed to be big crowd pleasers. 

Mango Bellini  

Let’s start off with something fancy – nothing says summer celebrations quite like a bellini. For this mango enthused summer cocktail recipe, you’ll need chilled champagne and fresh mango. Simply peel and chop a mango and add it to a blender with a good glug of champagne (about 100ml). Transfer your mango mix to a tall glass and top up with chilled champers for a speedy yet delicious summer cocktail.

Sea Breeze

A classic summer cocktail containing refreshing and zingy cranberry and grapefruit juice. Fill a tall glass half way up with ice and pour a double shot of vodka over the cubes (about 50ml). Top up with 100ml of cranberry juice and 50ml of grapefruit juice, then stir it all up and garnish with a slice of lime.

Woo Woo

Remember those crazy party nights at TGI Fridays – the ones where someone inevitably ordered a pitcher or two of woo woo? This is such a great party drink that’s quick and easy to make. Ideally you need a shaker, however a good stirrer will work just as well. Fill your shaker halfway with ice, pour in a double shot of vodka and a single shot of peach schnapps and add in 100ml of cranberry juice. Give it a good shake, add some lime juice, shake it again and serve! 

Mojito

The mojito is the perfect summer tipple; minty, refreshing, and dangerously moreish. The traditional mojito is made from white rum, sugar, mint, and soda water. Usually sugar syrup is used, but it’s possible to use granulated sugar as well. Squeeze the juice from one lime, a teaspoon of sugar, and a handful of mint leaves into a jug and mix it all together, crushing the mint leaves as you go. Using a rolling pin is great for this! Pour this mixture into a tall glass and add a handful of ice before pouring on a double shot of rum and topping up with soda water. Use a long handled spoon or a cocktail mixer to stir and add a few mint leaves to garnish.
